COCONUT RICE & BEANS
A few years ago I took my first trip to Notting Hill Carnival. We got swept away with the parade, danced on the street and tucked into mountains of Jerk chicken and rice at the local stalls dotted around the town. It really does hit the spot, and I came rushing home to try and make my own rice. It's now a firm favourite in this house, and I normally just fry some chicken thighs or breasts with some Jerk sauce (yes I am a cheat) and serve with rice and coleslaw. As I am about to make the trip back up in a few weeks I thought I would share this recipe to get everyone in the mood for carnival. Enjoy.
You will need to serve 4:
1 onion finely chopped
300ml long grain rice
400ml water
400ml coconut milk (1 tin)
4oog kidney beans (1 tin)
3 tbsp thyme (fresh or dried)
salt & pepper to season
2 tbsp vegetable oil
1. Heat the oil in a large pan and fry the onion until translucent
2. Add the rice, stir well and add the water and coconut milk. Bring to the boil
3. Add the kidney beans and thyme, simmer and cover for about 20 minutes until the rice is cooked, making sure to keep mixing otherwise it will burn.
4. Season with salt & pepper
