CAKE TIME
Just popping in to share the easiest cake recipe with you. I baked these last weekend to take to a bbq and thought I just had to share the recipe with you guys (aren't I good to you)
To make 24 cupcakes you will need
6oz self raising flour
6oz caster sugar
6oz margarine
3 eggs
1tbs vanilla essence
Once you have made these cakes once, it is so easy to remember, and you will be a pro in no time.
1. Heat the oven to 160 degrees and chop margarine into small chunks
2. Place the bowl into the oven for a few minutes to soften the marg (this makes it easier to mix)
3. Add the sugar and whisk both together
4. Sift in half the flour, 2 eggs and the vanilla essence and whisk together
5. Sift in the remaining flour and egg, and whisk for a good few minutes until you are left with a smooth, lump free mixture.
6. Prepare your cake cases on a baking tray and using a tablespoon scoop a dollop and place into the cases.
7. Place in the oven for 15-20 minutes. To check they are done, pop a skewer into the centre of the cake, if no mixture remains, then they are done.
To make vanilla frosting you will need
500g icing sugar
2oz margarine
1 tablespoon milk
1 tsp vanilla essence
1. Mix all ingredients together, and if mixture is too dry add a splash more milk.
Happy baking!

Looks delicious! I never seem to get the frosting quite right.
ReplyDeleteThis looks yummy and so easy! I usually make cupcakes, but like Sascha said I have problems with the frosting. I guess it needs practicing so I will keep trying! :) Have a good day!

Ahhh the infallible 6,6,6,3!!! Apparently I could recite that and tell you how to make a cake at age 6. I've never thought of putting love hearts on top though- it looks so lovely! xx
ReplyDeleteThey look amazing! Love the pastel icing! x
