SUMMER IN WINTER CHICKEN

As this weather hasn't decided which way is up, I thought I would share with you one of my favourite dishes that is easy to whip up, come summer or winter. The recipe comes from BBC good food, and I always find myself going back to it, as it's just so yummy. It's kind of an awkward meal to photograph due to the green vibe it gives off, but trust me, it tastes a lot better than it looks.

You have two options for this dinner, either with mash for the winter, or if your aching for the sun like me, go with rice for summer (maybe secretly if we all do this, summer may actually appear)

To feed four hungry people you will need,

1 tbsp olive oil
4 chicken breasts (diced)
200g cherry tomatoes
Mushrooms (optional)
3 tbsp pesto
3 tbsp creme fraiche

1. Heat the oil in a frying pan, add the chicken and fry for 6-8 until it takes on some colour
2. Add the pesto and creme fraiche and keep stirring for another 3-4 minutes
3. Add the cherry tomatoes (and mushrooms) for a further 4-5 minutes until the chicken is cooked (to check slice a piece in half, if it isn't pink then you are good to go)
4. Serve with rice or mash
